Lemon Curd

Ingredients

  • 2 lemons zest and juice
  • 100g caster sugar
  • 50g butter
  • 2 eggs, beaten

Method

  1. Put lemon zest, juice, sugar and butter in a heatproof bowl over a pan of simmering water. Stir occasionally until the butter has melted
  2. Then use a small whisk or fork to stir in the beaten egg
  3. Keep mixing this over the heat for about 10 minutes until it has thickened like custard
  4. Push the curd through a sieve to remove any lumps or zest

Notes

Will keep in sterilised jars in the fridge for up to two weeks.
