Lemon Curd

Ingredients
- 2 lemons zest and juice
- 100g caster sugar
- 50g butter
- 2 eggs, beaten
Method
- Put lemon zest, juice, sugar and butter in a heatproof bowl over a pan of simmering water. Stir occasionally until the butter has melted
- Then use a small whisk or fork to stir in the beaten egg
- Keep mixing this over the heat for about 10 minutes until it has thickened like custard
- Push the curd through a sieve to remove any lumps or zest
Notes
Will keep in sterilised jars in the fridge for up to two weeks.
