Ingredients

  • Olive Oil
  • 1tsp chili paste
  • 1 onion, diced (or frozen equivalent)
  • 1 tsp garlic paste / diced garlic
  • 2 tsp dried corriander
  • Can of cherry tomatoes
  • 2 eggs

Method

  1. Heat the oil in a pan with a lid. Soften the onion, chili, garlic and the corriander for 5 mins or until soft
  2. Stiru in the tomatoes & sugar. Allow to bubble for 8-10 minutes unitl thick
  3. Using the back of a large spoon - make a divot for each egg in the top of the sauce. Crack the eggs into the divots and cook over a low heat (with the lid on) for 6-8 minutes until the eggs are cooked
  4. Serve with crusty bread.
