Ingredients
- Olive Oil
- 1tsp chili paste
- 1 onion, diced (or frozen equivalent)
- 1 tsp garlic paste / diced garlic
- 2 tsp dried corriander
- Can of cherry tomatoes
- 2 eggs
Method
- Heat the oil in a pan with a lid. Soften the onion, chili, garlic and the corriander for 5 mins or until soft
- Stiru in the tomatoes & sugar. Allow to bubble for 8-10 minutes unitl thick
- Using the back of a large spoon - make a divot for each egg in the top of the sauce. Crack the eggs into the divots and cook over a low heat (with the lid on) for 6-8 minutes until the eggs are cooked
- Serve with crusty bread.
