Tomato & Meatball Orzo

Ingredients

  • 12-pack beef meatballs
  • 1 large onion
  • 2 tsp garlic paste
  • 1 tsp Paprika
  • 1 tsp Corriander
  • 1 tbsp mixed herbs
  • 400g tin chopped tomatoes
  • 2 tbsp tomato puree
  • 2 tbsp ketchup
  • 150g orzo
  • 1 tbsp vegetable gravy granules

Method

  1. Dice onion, fry in pan (preferably with lid) with garlic until soft
  2. Add in meatballs and brown
  3. Once meat browned - add in everything except orzo
  4. Add 250ml of cold water and orzo
  5. Simmer very gently for 20 minutes or until the orzo is cooked (note - must be very gentle or it burns), add more boiling water if needed
