Chickpea Curry

Ingredients
- 1 tbsp oil
- 2 leeks, halved lengthways and thinly sliced
- 2 bell peppers, diced
- Some mushrooms
- 400g tin chopped tomatoes
- 400g tin chickpeas, drained
- 2 tbsp tomato puree
- 1 heaped tbsp medium curry powder
Method
- Heat the oil in a large pan over a medium-high heat. Prep the veg and chuck it in the pan. Cook for a few minutes, stirring regularly, until the veg is fairly soft
- Add chickpeas, chopped tomatoes, tomato puree and curry poweder. Turn the heat to high, and bring the pan to a simmer. Cook for another 15 minutes, or so, or until the sauce is thickened.
Notes
Serves well with Rice or Nann.
