Chickpea Curry

Ingredients

  • 1 tbsp oil
  • 2 leeks, halved lengthways and thinly sliced
  • 2 bell peppers, diced
  • Some mushrooms
  • 400g tin chopped tomatoes
  • 400g tin chickpeas, drained
  • 2 tbsp tomato puree
  • 1 heaped tbsp medium curry powder

Method

  1. Heat the oil in a large pan over a medium-high heat. Prep the veg and chuck it in the pan. Cook for a few minutes, stirring regularly, until the veg is fairly soft
  2. Add chickpeas, chopped tomatoes, tomato puree and curry poweder. Turn the heat to high, and bring the pan to a simmer. Cook for another 15 minutes, or so, or until the sauce is thickened.

Notes

Serves well with Rice or Nann.
