Sausage Ragu

Ingredients

  • 1 tbsp oil
  • 1 large carrot, finely diced
  • 1 large onion, finely diced
  • 2 celery sticks, finely diced
  • 300g pork sausages, casings removed (alternatively use sausage meat)
  • 2 garlic cloves
  • 1/2 - 1 tsp crushed chilis
  • 400g tin chopped tomatoes

Method

  1. Heat oil in pan over high heat. Add onion, carrot, celery, sausage and cook until soft.
  2. Brak up sausages into small chunks, cook for about 10 minutes. Stir every now and again
  3. Ad the garlic & chili flakes and cook for a further minute or so before adding the tomatoes.
  4. Reduce the heat to a simmer and leave for a further 5 minutes, or unitl the desired consistency is reached.

Notes

Works well in a lasagne as the red sauce.
