Sausage Ragu

Ingredients
- 1 tbsp oil
- 1 large carrot, finely diced
- 1 large onion, finely diced
- 2 celery sticks, finely diced
- 300g pork sausages, casings removed (alternatively use sausage meat)
- 2 garlic cloves
- 1/2 - 1 tsp crushed chilis
- 400g tin chopped tomatoes
Method
- Heat oil in pan over high heat. Add onion, carrot, celery, sausage and cook until soft.
- Brak up sausages into small chunks, cook for about 10 minutes. Stir every now and again
- Ad the garlic & chili flakes and cook for a further minute or so before adding the tomatoes.
- Reduce the heat to a simmer and leave for a further 5 minutes, or unitl the desired consistency is reached.
Notes
Works well in a lasagne as the red sauce.
