Chocolate Courgette Cake

Ingredients
Wet Ingredients
- 250g sugar
- 80ml neutral oil
- 240g coarsely grated courgette
Dry Ingredients
- 65g unsweetened cocoa powder
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 1/2 tsp baking powder
- 210g all purpose flour
- 100g dark chocolate chunks
Method
- Heat the oven to 175C. Grease a 1kg/2lb cake tin
- Mix all wet in large bowl
- Sive cocoa in to the wet mix. Fold until it's combined
- Sieve baking soda, baking powder, salt and flour in, splitting between two incorporations. Fold gently.
- Fold in the chocolate chunks. The batter should now be thick
- Sling it in the tin
- Bake for 42-45 minutes. Allow to cool before slicing
