Chocolate Courgette Cake

Ingredients

Wet Ingredients

  • 250g sugar
  • 80ml neutral oil
  • 240g coarsely grated courgette

Dry Ingredients

  • 65g unsweetened cocoa powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 210g all purpose flour
  • 100g dark chocolate chunks

Method

  1. Heat the oven to 175C. Grease a 1kg/2lb cake tin
  2. Mix all wet in large bowl
  3. Sive cocoa in to the wet mix. Fold until it's combined
  4. Sieve baking soda, baking powder, salt and flour in, splitting between two incorporations. Fold gently.
  5. Fold in the chocolate chunks. The batter should now be thick
  6. Sling it in the tin
  7. Bake for 42-45 minutes. Allow to cool before slicing
